Suspension question: Bags vs. Coilovers

I just bought a Jaguar Mk2. I’ll post all the details, build plan etc soon, but I need to settle my suspension plans first.
The first stop on its customizing journey is suspension. I want the car to be low and smooth, yet sporty, like a GT car. A mix of European and American style and performance. I’ve been thinking about air bags for adjustability and cost, but there’s also something cool about a car that’s low all the time. I had a 59 Chevy with 3+ inch lowered springs and it was great, but it was also difficult to get in and out of places sometimes.
The Jag is unibody and independent suspension in front with a solid axle in the rear suspended by quarter elliptical leaf springs.
Thoughts? Suggestions? Experiences?
